Although it is not always possible to draw clean lines between the two, here are some of the key differences between a demonstration and an illustrated talk.

A demonstration is showing and telling how.  In a demonstration you make something or do something using the actual objects and there is always a finished product. 

An illustrated talk is talking or telling how to do something with the aid of charts, pictures, models, etc.
